Learn and discover a slower, greener side of Tokyo in Yaho—a pocket of fields and a beautiful shrine just a short ride from the city center. This hands-on tour is all about fermentation and flavor. Harvest seasonal vegetables at a local sustainable farm, then cook a balanced meal together. Learn how koji transforms simple ingredients into deep umami in miso, shio-koji, and quick pickles. Taste each step, hear the stories behind it, and bring home tips you can use in your own kitchen.Experience the harmony between nature, community, and food culture that defines this unique part of Tama, Tokyo. Note: The dishes and ingredients change by season and by what we can harvest that day.

Itinerary

10:00 — Meet-up, Check-in & Orientation
Meet at the south exit of Yaho station(JR Nambu line). We will have a short orientation.

10:10-–10:30 Walk to the Farm
Walk through a beautiful shrine called Yaho Tenmangu learning about the history and nature.

10:30–11:30 — Harvest at “Regional Circular Farm ”Yaho!”
Picking seasonal vegetables (e.g., molokhia, green pepper, eggplant, water spinach).

11:30–12:30 — Cooking session
Prepare dishes using harvested vegetables:
● Molokhia miso soup
● Green peppers with sesame dressing
● Grilled eggplant with miso glaze (nasu dengaku)
● Stir-fried chicken with shio-koji & water spinach
● Pot-cooked rice
● Freshly boiled peanuts
*The menu will change depending on the season

12:30–14:00 — Lunch & Fermentation mini-class
Tasting and Learning: what fermentation is, why Japan uses koji, health benefits, and fun trivia (umami, “drinkable IV” amazake, etc.).

14:00–14:30 — Return to JR Yaho Station / Farewell
Walk back to Yaho station together.

Cancellations made by 4:00 PM, two days prior to the tour date, are free of charge. After that, a 100% cancellation fee will apply.In case of inclement weather, the tour will be canceled and you’ll be offered either a rescheduled date or a full refund. Note: The tour will proceed in light rain.
